Gluten-free Banana Oatmeal Cookies

Ingredients

  • 1 1/2 cup Namaste gluten free perfect flour blend
  • 1 cup sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/4 tsp nutmeg
  • 1 tsp cinnamon
  • 3/4 cup coconut oil
  • 1 egg
  • 2 bananas, mashed
  • 2 cups oatmeal
  • 1/2 cup walnuts, chopped

Instructions

  1. Cream sugar and coconut oil. Add egg and mix well. Alternate adding dry ingredients with mashed banana. Drop by teaspoon and bake at 400 degrees on parchment paper lined cookie sheets until lightly browned around the edges, about 8-10 minutes.
